Date and Spinach Salad

Description

An almost no-cook salad! If you do not like the idea of eating raw spinach, you can blanch it before shredding.

Ingredients

  • 1 cup plain yogurt
  • ½ teaspoon white sugar, or to taste
  • salt to taste
  • freshly ground black pepper to taste
  • 1 cup shredded fresh spinach
  • ½ cup dates, pitted and chopped
  • 1 pinch red pepper flakes

Instructions

  1. Mix yogurt
  2. sugar
  3. salt
  4. and black pepper together in a bowl. Add spinach and dates; stir to combine. Sprinkle with red pepper flakes.
