Cucumber Slaw

Description

A new twist that is healthier than a basic slaw. This is easy and fast to make.

Ingredients

  • 2 cucumbers – quartered, seeded, and thinly sliced
  • 2 carrots, shredded
  • ¼ onion, grated
  • 2 tablespoons white sugar
  • 1 ½ teaspoons ground coriander
  • 1 teaspoon kosher salt
  • ½ teaspoon coarse ground black pepper
  • ¼ cup apple cider vinegar

Instructions

  1. Combine cucumbers
  2. carrots
  3. onion
  4. sugar
  5. coriander
  6. salt
  7. and black pepper together in a bowl; add vinegar and mix well.
