Description
A tasty summer classic with some added kick from roasted red peppers and pepperoncini. This zesty salad is great for potlucks because it’s not the usual bland potato salad.
Ingredients
- 4 potatoes, peeled
- ½ cup chopped onion
- ½ cup chopped celery
- 2 tablespoons chopped roasted red pepper
- 2 tablespoons chopped pepperoncini
- 2 hard cooked eggs, chopped
- ⅓ cup mayonnaise
- ⅓ cup sour cream
- 3 tablespoons dill pickle relish
- 1 teaspoon Dijon mustard
- 1 tablespoon prepared yellow mustard
- 1 clove garlic, minced
- 1 teaspoon dried dill
- 1 teaspoon chopped parsley
- ½ teaspoon red pepper flakes
- salt and black pepper to taste
