Crispy Potato Pancakes

Need a tasty side for any meal of the day? These are the route to go. I tried this recipe in my culinary class and they were amazing! Everyone raved about their excellent texture and flavor!

Ingredients

  • 2 pounds potatoes, peeled and coarsely shredded
  • 2 onions, minced
  • 3 eggs, beaten
  • ¼ cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon lemon juice
  • 1 pinch ground nutmeg, or to taste
  • salt and ground black pepper to taste
  • ¼ cup vegetable oil

Instructions

  1. Mix potatoes
  2. onions
  3. eggs
  4. flour
  5. baking powder
  6. and lemon juice in a large bowl; season with nutmeg
  7. salt
  8. and black pepper. Shape potato mixture into 12 evenly sized patties.
  9. Heat vegetable oil in a large skillet over medium heat. Pan-fry potato patties in batches until tender and browned on both sides
  10. 7 to 10 minutes. Transfer browned patties to a paper towel-lined baking sheet. Repeat with remaining patties.
