Description

They call this a ‘pate’ in France. Good on fresh bread but even better on toast with butter.

Ingredients

  • 1 ½ pounds fresh pork fat without skin, cut into 1-inch cubes
  • 3 pounds lean ground pork
  • 3 onions, finely chopped
  • 4 teaspoons salt, or to taste
  • 1 ½ teaspoons ground allspice
  • ground black pepper to taste
  • 2 cups boiling water
