Creamy Veggie Potato Stew

Description

This creamy stew is a thick mixture of potatoes and other vegetables that’s sure to warm you on the chilliest of winter days.

Ingredients

  • 3 quarts water
  • 8 large potatoes, peeled and sliced
  • 4 large carrots, diced
  • 2 stalks celery, chopped
  • 2 small onions, chopped
  • ⅓ cup butter
  • 2 tablespoons all-purpose flour
  • 1 ½ teaspoons salt
  • 1 teaspoon ground black pepper
  • ¼ teaspoon paprika
  • 2 cups heavy cream

Instructions

  1. Bring water to a boil in a large saucepan; stir in the potatoes
  2. carrots
  3. and celery. Boil vegetables until tender but firm
  4. about 15 minutes. Remove from heat; drain and set aside
  5. reserving liquid.
  6. Melt butter in a large saucepan over medium heat. Add onions; cook and stir until tender
  7. about 5 to 7 minutes. Mix in flour
  8. salt
  9. pepper
  10. and paprika; stir in heavy cream. Add potatoes
  11. carrots
  12. and celery; continue cooking and stirring
  13. adding the reserved cooking liquid
  14. a tablespoon at a time
  15. until stew has reached the desired consistency.
