Creamy Summer Coleslaw

Description

Not only healthy, but quick and easy. It’s definitely a crowd-pleaser.

Ingredients

  • ½ cup mayonnaise
  • ⅓ cup white sugar
  • ¼ cup milk
  • 2 tablespoons lemon juice
  • 1 ½ tablespoons white vinegar
  • 2 teaspoons sour cream
  • ½ teaspoon freshly ground black pepper, or to taste
  • 1 pinch cayenne pepper, or to taste
  • 1 pound cabbage, cut into wedges
  • 2 carrots
  • ¼ small onion, chopped, or to taste

Instructions

  1. Stir mayonnaise
  2. sugar
  3. milk
  4. lemon juice
  5. vinegar
  6. sour cream
  7. black pepper
  8. and cayenne pepper together in a small bowl.
  9. Shred cabbage
  10. carrots
  11. and onion in a food processor with grater attachment; place vegetables in a large bowl and stir to combine. Stir mayonnaise mixture into cabbage mixture; cover and refrigerate for at least 2 hours and preferably overnight. Stir coleslaw before serving.
