Cranberry Nut Bread I

Description

A moist quick bread with a faint hint of orange flavor, and the tang of bits of cranberries.

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup white sugar
  • ¾ teaspoon salt
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 cup chopped cranberries
  • ½ cup chopped walnuts
  • 1 egg
  • 2 tablespoons vegetable oil
  • ¾ cup orange juice
  • 1 tablespoon orange zest

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×5-inch loaf pan.
  2. Combine flour
  3. sugar
  4. baking powder
  5. salt
  6. and baking soda in a mixing bowl. Add walnuts and stir until well coated.
  7. Mix together orange juice
  8. egg
  9. oil
  10. and orange zest in a smaller bowl. Pour the orange juice mixture into the flour mixture
  11. and stir until just blended. Spoon the batter into the prepared pan.
  12. Bake in the preheated oven until a toothpick inserted near the center comes out clean
  13. about 50 minutes.
  14. Remove from the oven and cool in pan briefly before removing to a wire rack to cool completely.
