Cracked Wheat and Mint Salad

This is mom’s awesome summer salad that everyone loved in the summer.

Ingredients

  • 2 cups boiling water
  • 2 cups cracked wheat
  • 1 (15 ounce) can chickpeas, drained
  • ⅔ cup olive oil
  • 1 red bell pepper, finely chopped
  • 1 (4 ounce) package feta cheese
  • 3 tablespoons red wine vinegar
  • ¼ cup olives
  • 1 carrot, finely chopped
  • ¾ cup fresh mint
  • 1 tablespoon white vinegar
  • 1 clove garlic, crushed

Cook Time: 5 mins

Total Time: 1 hr 40 mins
