Crab and Swiss Omelet

Description

A delicious omelet made with Dungeness crab, mushrooms, and Swiss cheese.

Ingredients

  • 2 tablespoons butter
  • ½ cup sliced fresh mushrooms
  • 4 eggs, separated
  • 2 tablespoons milk
  • 1 cup cooked crabmeat
  • 1 cup shredded Swiss cheese

Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Stir in mushrooms
  2. and cook until tender
  3. about 5 minutes. Using a slotted spoon
  4. transfer mushrooms to a plate. Remove skillet from heat.
  5. In a small bowl
  6. beat egg yolks and milk to blend. In a separate bowl
  7. beat egg whites with a dry beater until soft peaks form. Fold yolk mixture into whites.
  8. Return skillet to medium-high heat. When butter sizzles
  9. pour egg mixture into skillet. Sprinkle mushrooms and crab meat evenly over the top. Cook until omelet begins to set
  10. about 3 minutes. Sprinkle with Swiss cheese. Using a large spatula
  11. fold omelet over
  12. forming semicircle. Cover skillet; cook until omelet puffs and is cooked through
  13. about 3 minutes. Slide omelet onto a large plate.
