Corn Muffins

Description

Tried these out during Thanksgiving. They were a big hit!

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • ½ cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • ½ cup butter, melted
  • 1 egg, beaten

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups.
  2. Mix flour
  3. cornmeal
  4. sugar
  5. baking powder
  6. and salt in a large bowl. Add buttermilk
  7. butter
  8. and egg; mix well. Spoon the batter into the prepared muffin cups.
  9. Bake in the preheated oven until a toothpick inserted into the center comes out clean
  10. 12 to 15 minutes. Cool in the pans 10 to 15 minutes before removing from pan to cool completely on a wire rack.
