Corn and Black Bean Salad

Ingredients

  • ¼ cup balsamic vinegar
  • 2 tablespoons vegetable oil
  • ½ teaspoon salt
  • ½ teaspoon white sugar
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • 3 tablespoons chopped fresh cilantro
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (8.75 ounce) can sweet corn, drained

Instructions

  1. In a small bowl
  2. mix together balsamic vinegar
  3. oil
  4. salt
  5. sugar
  6. black pepper
  7. cumin
  8. and chili powder.
  9. In a medium bowl
  10. stir together black beans and corn. Toss with vinegar and oil dressing
  11. and garnish with cilantro. Cover
  12. and refrigerate overnight.
