Coconut Pancake Syrup

Description

I searched everywhere for a coconut syrup recipe like I enjoyed while I was in Hawaii. When every recipe I tried failed to satisfy me, I was compelled to create my own.

Ingredients

  • 1 (13.5 ounce) can coconut milk
  • 2 tablespoons cornstarch
  • 2 cups light corn syrup
  • ½ cup white sugar
  • ½ cup shredded sweetened coconut

Instructions

  1. Whisk together the coconut milk and cornstarch in a saucepan until the cornstarch is dissolved. Pour in the corn syrup
  2. sugar
  3. and coconut; bring to a boil
  4. stirring continually. As soon as the mixture comes to a rolling boil
  5. remove from heat. Allow to cool completely before serving.
