Classic Lemon Pie

Description

This is the best lemon pie ever! It is always a hit. It is a family recipe that even those who do not like lemon pie, love. A must try!

Ingredients

  • 1 cup white sugar
  • 1 cup milk
  • ¼ cup unsalted butter, melted
  • ¼ cup lemon juice
  • 3 large egg yolks, slightly beaten
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon zest
  • 1 cup sour cream
  • 1 (9 inch) baked pie crust
  • 3 large egg whites
  • ⅓ cup white sugar
  • 1 teaspoon cornstarch

Instructions

  1. Combine sugar
  2. milk
  3. butter
  4. lemon juice
  5. egg yolks
  6. cornstarch
  7. and lemon zest in a medium saucepan. Cook over medium heat
  8. stirring constantly
  9. until thick
  10. 15 to 20 minutes. Remove from heat
  11. cover
  12. and let cool
  13. about 30 minutes.
  14. Fold in sour cream; pour into the baked pie crust. Chill in the refrigerator for at least 2 hours.
  15. Beat egg whites
  16. sugar
  17. and cornstarch together in a bowl using an electric mixer until stiff peaks form. Spread meringue on top of filling
  18. right up to the edge of the crust.
  19. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
  20. Broil in the preheated oven until meringue is lightly browned
  21. 5 to 7 minutes. Serve immediately.
