Chocolate Rice Pudding

Description

A very quick and creamy dessert that can be made with leftover rice from last night’s dinner.

Ingredients

  • ¾ cup uncooked white rice
  • 1 ¼ cups water
  • 1 ½ cups milk
  • ⅓ cup white sugar
  • 1 teaspoon vanilla extract
  • ⅓ cup raisins
  • 1 tablespoon butter
  • 2 tablespoons unsweetened cocoa

Instructions

  1. In a saucepan bring water to a boil. Add rice and stir. Reduce heat
  2. cover and simmer for 20 minutes.
  3. In the top of a double boiler over simmering water
  4. combine 1 1/2 cups cooked rice
  5. milk
  6. sugar
  7. vanilla
  8. raisins
  9. butter and cocoa. Cook
  10. stirring occasionally
  11. until thickened
  12. 20 to 30 minutes.
