Chocolate Oaties with Coconut Oil

Description

Soft oatmeal chocolate chip cookies made with coconut oil. You can make these with any kind of baking chips, not just dark chocolate.

Ingredients

  • 1 cup butter
  • 6 tablespoons coconut oil
  • ¾ cup packed brown sugar
  • 1 tablespoon packed brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 3 cups quick-cooking oats
  • 1 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Combine butter and coconut oil in a saucepan over medium-low heat; cook until melted
  3. 2 to 3 minutes. Set aside to cool.
  4. Mix 3/4 cup plus 1 tablespoon brown sugar
  5. white sugar
  6. eggs
  7. and vanilla extract together in a mixing bowl.
  8. Combine flour
  9. baking soda
  10. and salt in a separate bowl. Add to egg mixture
  11. mixing well. Stir in oats and chocolate chips.
  12. Roll heaping tablespoonfuls of cookie dough into balls. Place 2 inches apart on ungreased cookie sheets.
  13. Bake in the preheated oven until edges are set
  14. about 12 minutes. Cool on the cookie sheets for 2 minutes
  15. then transfer to wire cooling racks.
