Chocolate-Cranberry Energy Bars

Description

A tasty snack that is easy on the stomach and has a good balance of ingredients to provide energy during athletic activities, training, or events.

Ingredients

  • ½ cup raw almonds
  • ½ cup walnuts
  • ½ cup pitted dates
  • ½ cup dried cranberries
  • ⅛ cup shredded coconut
  • 3 teaspoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. Pulse almonds and walnuts together in the bowl of a food processor until chopped. Add dates and cranberries
  3. a little at a time

  6. and vanilla extract. Process to desired consistency.
  7. Roll dough into a 2-inch wide log and cut into ten 3/4-inch thick pucks. Place on the prepared baking sheet.
