Chocolate Biscuit Pudding

Description

This recipe was passed down to me from my mother, written by my maternal grandmother. Although we never met, I feel I know her through her hand written recipes.

Ingredients

  • ½ cup white sugar
  • ⅓ cup unsweetened cocoa powder
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 eggs
  • 2 cups milk
  • ½ teaspoon vanilla extract
  • 1 tablespoon vegetable oil
  • 4 day old biscuits, crumbled

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8×8-inch baking dish.
  2. Mix sugar
  3. cocoa powder
  4. cinnamon
  5. and salt in a small bowl. Whisk milk
  6. eggs
  7. vegetable oil
  8. and vanilla in a medium bowl. Add sugar mixture to milk mixture; stir until combined.
  9. Cover the bottom of the prepared baking dish with an even layer of crumbled biscuits. Pour custard mixture evenly over biscuits; press down onto the biscuits with the back of a large spoon to moisten them.
  10. Place the baking dish into a larger high-sided baking pan. Place dish on oven rack; add enough hot water to come halfway up the sides of the dish. Bake in preheated oven for 45 minutes
  11. or until pudding is set.
