Chinky’s Mango Bread

Description

Get tropical with this mango-packed loaf enhanced with cinnamon and raisins. A wonderful summertime snack.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1 ¼ cups white sugar
  • 2 eggs
  • ¾ cup vegetable oil
  • 2 ½ cups mangos, peeled, seeded and chopped
  • 1 teaspoon lemon juice
  • ¼ cup raisins

Instructions

  1. Combine all of the dry ingredients. Beat eggs with oil and add to flour mixture. Add mangoes
  2. lemon and raisins.
  3. Pour into 2 greased 8 x 4 loaf pans. Bake at 350 degrees F -175 degrees C (325 degrees F for glass pans) for about 60 minutes or until toothpick comes out clean.
