Chickpea “Cookie Dough”

Description

No one will ever guess that this “cookie dough” is made with a can of chickpeas! Eat as-is or roll into balls and freeze. You can add raisins, M&M’s®, peanut butter chips, then roll them in coconut, powdered sugar, or cocoa. I added chocolate chips and chopped peanuts but the choices are endless.

Ingredients

  • 1 (15 ounce) can chickpeas, drained
  • ½ cup peanut butter
  • ½ cup pure maple syrup, or to taste
  • 3 tablespoons all-purpose flour
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • ½ cup vegan chocolate chips
  • 2 tablespoons peanuts

Instructions

  1. Combine chickpeas
  2. peanut butter
  3. maple syrup
  4. flour
  5. vanilla
  6. and salt in a powerful blender
  7. such as a Vitamix®. Blend until smooth
  8. using tamper if needed. Scoop into a bowl.
  9. Stir in chocolate chips and peanuts. Roll mixture into balls.
