Chicken Creole

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 onion, thinly sliced
  • 1 stalk celery, sliced thin
  • 1 green bell pepper, minced
  • 2 (16 ounce) cans diced tomatoes
  • 1 bay leaf
  • ½ teaspoon salt
  • ⅛ teaspoon cayenne pepper
  • 4 skinless, boneless chicken breasts

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a large skillet
  3. heat oil over medium heat. Add garlic
  4. onion
  5. celery
  6. and bell pepper. Cook
  7. stirring occasionally
  8. until tender (about 4 minutes). Add tomatoes
  9. bay leaf
  10. salt
  11. and cayenne pepper. Cook the sauce 3 minutes longer
  12. stirring often.
  13. Arrange chicken breasts in an 8×11-inch baking dish. Pour the Creole sauce over chicken.
  14. Bake 15 to 20 minutes
  15. until chicken is tender and white throughout.
