Chicken Breasts with Herb Basting Sauce

Description

Chicken breasts basted with a medley of herbs. Can also be made with skinless, boneless meat.

Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon minced onion
  • 1 clove crushed garlic
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • ¼ teaspoon ground sage
  • ¼ teaspoon dried marjoram
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ⅛ teaspoon hot pepper sauce
  • 4 bone-in chicken breast halves, with skin
  • 1 ½ tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C).
  2. In a bowl
  3. prepare basting sauce by combining olive oil
  4. onion
  5. garlic
  6. thyme
  7. rosemary
  8. sage
  9. marjoram
  10. salt
  11. pepper
  12. and hot pepper sauce.
  13. Turn chicken breasts in sauce to coat thoroughly. Place skin-side up in a shallow baking dish. Cover.
  14. Roast chicken in the preheated oven
  15. basting occasionally with pan drippings
  16. for about 35 to 45 minutes. Remove to a warm platter
  17. spoon pan juices over chicken and sprinkle with fresh parsley.
