Chia Seed Muffins

Description

A delicious and healthy twist on the classic poppy seed muffin.

Ingredients

  • cooking spray
  • 3 cups all-purpose flour
  • 2 ⅓ cups white sugar
  • 1 ½ cups almond milk
  • 1 cup vegetable oil
  • 2 tablespoons vegetable oil
  • 3 eggs, beaten
  • 2 tablespoons chia seeds
  • 2 ½ teaspoons almond extract
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons salt

Instructions

  1. Preheat oven to 300 degrees F (150 degrees C). Grease 2 muffin tins lightly with cooking spray.
  2. Mix flour
  3. sugar
  4. almond milk
  5. 1 cup plus 2 tablespoons vegetable oil
  6. eggs
  7. chia seeds
  8. almond extract
  9. vanilla extract
  10. baking powder
  11. and salt together in a large bowl. Scoop batter into the prepared muffin tins.
  12. Bake in the preheated oven until a toothpick inserted into the center comes out clean and tops are light golden in color
  13. about 40 minutes.
