A delicious and healthy twist on the classic poppy seed muffin.
Ingredients
- cooking spray
- 3 cups all-purpose flour
- 2 ⅓ cups white sugar
- 1 ½ cups almond milk
- 1 cup vegetable oil
- 2 tablespoons vegetable oil
- 3 eggs, beaten
- 2 tablespoons chia seeds
- 2 ½ teaspoons almond extract
- 2 teaspoons vanilla extract
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons salt
Instructions
- Preheat oven to 300 degrees F (150 degrees C). Grease 2 muffin tins lightly with cooking spray.
- Mix flour
- sugar
- almond milk
- 1 cup plus 2 tablespoons vegetable oil
- eggs
- chia seeds
- almond extract
- vanilla extract
- baking powder
- and salt together in a large bowl. Scoop batter into the prepared muffin tins.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean and tops are light golden in color
- about 40 minutes.
