Description
Chia seeds are a wonderful alternative source of omega-3 fats, fiber, and energy. This easy pudding is similar to tapioca. It can be served warm. Add fresh fruit for a nice twist. Use whatever dried fruit you prefer for topping.
Ingredients
- 2 cups milk
- ⅔ cup chia seeds
- 1 tablespoon white sugar
- ½ teaspoon vanilla extract
- 2 tablespoons unsweetened coconut flakes (Optional)
- 2 tablespoons raisins (Optional)
Instructions
- Combine milk
- chia seeds
- sugar
- and vanilla extract in a bowl; let sit about 10 minutes. Stir the mixture
- cover the bowl with plastic wrap
- and refrigerate 8 hours to overnight.
- Top the pudding with coconut and raisins to serve.
