Cherry Chocolate Cake

Description

Very moist and rich. A favorite of my two grown sons. It keeps very well.

Ingredients

  • ½ cup butter
  • 1 ½ cups white sugar
  • 2 eggs
  • 1 teaspoon almond extract
  • ½ cup unsweetened cocoa powder
  • 1 ¾ cups cake flour
  • 1 ¼ teaspoons baking soda
  • 1 teaspoon salt
  • 1 (21 ounce) can cherry pie filling

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9×13-inch baking pan.
  2. Cream butter with sugar in a bowl until light and fluffy. Mix in eggs and almond extract; beat well. Add cocoa powder and mix until well combined.
  3. Stir together cake flour
  4. baking soda
  5. and salt in a separate bowl. Add flour mixture to butter mixture; mix until just combined. Stir in cherry pie filling. Pour batter into the prepared pan.
  6. Bake in the preheated oven until a toothpick inserted near the middle comes out clean
  7. 30 to 35 minutes. Cool and frost with chocolate buttercream.
