Chef John’s Granola

Description

There’s no better way to enjoy sweet, juicy, late-summer fruit than a parfait with yogurt and crunchy, homemade granola.

Ingredients

  • ¼ cup packed brown sugar
  • 3 tablespoons maple syrup
  • 2 tablespoons vegetable oil
  • ½ teaspoon salt
  • 1 ½ cups rolled oats
  • ½ cup chopped almonds
  • ½ cup raw pumpkin seeds
  • ⅓ cup shredded coconut
  • ½ cup dried currants

Instructions

  1. Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner.
  2. Combine brown sugar
  3. maple syrup
  4. oil
  5. and salt in a bowl. Add oats
  6. almonds
  7. pumpkin seeds
  8. and coconut. Mix well until all ingredients are evenly coated.
  9. Pour mixture onto the prepared baking sheet and distribute in an even layer.
  10. Bake in the preheated oven
  11. lightly stirring every 10 to 15 minutes with the tines of a fork
  12. until evenly toasted and golden brown
  13. about 1 hour.
  14. Remove from the oven. Transfer hot granola into a large bowl and mix in currants. Let cool to room temperature
  15. about 30 minutes.
