Chef John’s Easy One-Bowl Hollandaise Sauce

I tried making hollandaise sauce with cold butter instead of melted butter and all in one bowl. And it worked! The only way this doesn’t work is if the heat is up too high, so keep an eye on that.

Ingredients

  • 1 large egg yolk
  • 2 tablespoons cold water
  • 1 tablespoon fresh lemon juice
  • Salt to taste
  • 1 pinch cayenne pepper
  • 4 tablespoons cold unsalted butter, cubed

Instructions

  1. Place egg yolk into a large stainless steel bowl. Whisk in water
  2. lemon juice
  3. salt
  4. and cayenne pepper. Add butter cubes.
  5. Place bowl over low heat. Whisk continually until butter melts and the mixture gets foamy
  6. about 3 minutes. Continue whisking over low heat until sauce is to your desired thickness
  7. 3 to 5 more minutes.
