Creamy, easy, and so very tasty, this casserole can be made ahead of time and can be changed depending on the cheese and veggies used. It’s great for a brunch, lunch, or easy dinner and a great way to use up leftover ham.

- 1 cup chopped mushrooms
- 1 onion, chopped
- 1 green bell pepper, chopped
- 4 cups frozen shredded hash brown potatoes, thawed
- 2 cups diced cooked ham
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 cup sour cream
- 1 cup shredded Cheddar cheese, divided
- 1 cup grated Parmesan cheese, divided
