Cheese Stuffed Mushroom Appetizer

Description

A local restaurant in North Carolina made these. I loved them, but they were horribly expensive. So I figured out how to make them on my own. They are truly rich and delicious. Serve about 6 each as an appetizer. The filling is soft and creamy, if you prefer a firmer filling add an egg white to the cheese mixture.

Ingredients

  • 6 tablespoons butter
  • 2 pounds medium fresh mushrooms, stems removed
  • 1 (8 ounce) package Neufchatel cheese
  • 1 (4 ounce) package goat cheese crumbles
  • 2 tablespoons finely chopped onion
  • ½ cup mushroom stems, chopped
  • ¼ cup butter
  • 1 tablespoon finely chopped garlic

Prep Time: 30 mins

Cook Time: 15 mins

Total Time: 45 mins
