Cauliflower-Cheese Soup

Description

A soothing cheesy soup. Serve with a roll and a salad.

Ingredients

  • ¾ cup water
  • 1 cup cauliflower, chopped
  • 1 cup cubed potatoes
  • ½ cup finely chopped celery
  • ½ cup diced carrots
  • ¼ cup chopped onion
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 3 cups milk
  • salt and pepper to taste
  • 4 ounces shredded Cheddar cheese

Instructions

  1. In a large saucepan
  2. combine water
  3. cauliflower
  4. potatoes
  5. celery
  6. carrots
  7. and onion. Boil for 5 to 10 minutes
  8. or until tender. Set aside.
  9. Melt butter in separate saucepan over medium heat. Stir in flour
  10. and cook for 2 minutes. Remove from heat
  11. and gradually stir in milk. Return to heat
  12. and cook until thickened. Stir in vegetables with cooking liquid
  13. and season with salt and pepper. Stir in cheese until melted
  14. and remove from heat.
