Carrot Souffle

Description

An excellent side dish, or have it for brunch.

Ingredients

  • 1 pound carrots, coarsely chopped
  • ½ cup margarine
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup white sugar

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart casserole dish.
  2. Bring a large pot of salted water to a boil. Add carrots and cook until tender
  3. 15 to 20 minutes. Drain and mash. Stir in margarine
  4. vanilla extract
  5. and eggs; mix well.
  6. Sift flour
  7. baking powder
  8. salt
  9. and sugar together. Stir into the carrot mixture and blend until smooth. Transfer to the prepared casserole dish.
  10. Bake for 45 minutes.
