Carrot Latkes (Pancakes)

Description

These are great as a side dish or make them a little smaller and top with a dollop of sour cream for an easy appetizer. They also freeze beautifully.

Ingredients

  • oil for frying, or as needed
  • 2 cups grated carrots
  • 6 green onions, chopped
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • 3 eggs
  • ¾ teaspoon salt
  • 1 pinch freshly ground black pepper

Cook Time: 15 mins
