Cantaloupe Crunch

Description

This is a great way to get anyone to eat cantaloupe. It’s quick, easy, and delicious.

Ingredients

  • 3 cups cubed cantaloupe
  • ⅓ cup lemon juice
  • ½ cup white sugar
  • 1 tablespoon all-purpose flour
  • 2 tablespoons butter, melted
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon vanilla extract
  • 1 (18.25 ounce) package white cake mix
  • ½ cup butter, melted

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Mix cantaloupe
  3. sugar
  4. lemon juice
  5. 2 tablespoons melted butter
  6. flour
  7. vanilla
  8. cinnamon
  9. and nutmeg together in a medium bowl. Pour into a 9-inch square baking dish.
  10. Spread dry cake mix evenly over cantaloupe mixture
  11. then drizzle 1/2 cup melted butter over top.
  12. Bake in the preheated oven until golden brown
  13. about 45 minutes.
