California Chicken

Description

This recipe is great for summertime veggies from the garden, and quick too!

Ingredients

  • 4 skinless, boneless chicken breasts
  • 1 teaspoon olive oil
  • ½ teaspoon onion powder
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 2 avocados – peeled, pitted and sliced
  • 2 ripe tomatoes, sliced
  • 1 (8 ounce) package Monterey Jack cheese, cut into 10 slices

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Warm oil in a skillet and add chicken. Season with onion powder. Cook until chicken is browned and just about done
  3. 15 minutes. Add salt and pepper to taste.
  4. Place chicken on a cookie sheet and top each breast with 1 to 2 slices of tomato and 2 to 3 slices of cheese.
  5. Place in the preheated oven until cheese melts
  6. 10 to 15 minutes. Remove from the oven
  7. add 2 to 3 slices of avocado on top of each breast
  8. and serve immediately.
