Brownie Cheesecake Cupcakes

Description

Kind of like cheesecake-swirled brownies but made in cupcake cups. Easy to make with package brownie mix. Also cheesecake mix doesn’t contain eggs.

Ingredients

  • 1 (18.25 ounce) package brownie mix (such as Pillsbury®)
  • ⅔ cup oil
  • 2 eggs
  • ¼ cup water
  • 1 (8 ounce) package cream cheese, softened
  • ½ cup white sugar
  • 3 tablespoons butter, softened
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  2. Make the brownie batter: Mix brownie mix
  3. oil
  4. eggs
  5. and water together in a bowl until well combined.
  6. Make the cheesecake batter: Mix cream cheese
  7. sugar
  8. butter
  9. flour
  10. and vanilla together in a separate bowl.
  11. Spoon brownie batter into the prepared muffin cups
  12. filling each 1/2 full. Top with cheesecake batter
  13. then spoon brownie batter over top. Reserve any remaining brownie batter for another use.
  14. Bake in the preheated oven until a toothpick inserted in the center of the brownie part comes out clean
  15. 20 to 25 minutes.
  16. Remove from the oven and let cool on a wire rack.
