Broccoli Potato Soup

Description

A quick, hearty soup. Great on a wintry afternoon.

Ingredients

  • 2 cups broccoli florets
  • 1 onion, sliced
  • 1 tablespoon margarine
  • 1 (10.75 ounce) can condensed cream of potato soup
  • 1 cup milk
  • ½ cup water
  • ¾ teaspoon chopped fresh basil
  • ¼ teaspoon ground black pepper
  • ⅓ cup shredded Cheddar cheese

Instructions

  1. In a large saucepan over medium heat
  2. saut E the broccoli and onion in the butter or margarine
  3. about 5 minutes
  4. or until tender. Stir in the soup
  5. milk
  6. water
  7. basil and pepper. Mix well and heat through
  8. about 15 minutes. Add cheese and stir until melted.
