Description
This is a great salad to pack for lunch at work, or to take to family gatherings. Try adding a bit of crumbled, cooked bacon for variety!
Ingredients
- 3 cups broccoli florets
- ½ cup chopped red onion
- ¼ cup sunflower seeds
- ½ cup chopped raisins
- ½ cup crumbled feta cheese
- ½ cup plain low-fat yogurt
- ¼ cup light mayonnaise
- 2 tablespoons white sugar
- 1 tablespoon lemon juice
- salt and pepper to taste
Instructions
- Make the dressing: Mix yogurt
- mayonnaise
- sugar
- and lemon juice together in a 2-cup liquid measure.
- Make the salad: Stir broccoli
- onion
- raisins
- sunflower seeds
- and feta together in a salad bowl.
- Pour dressing over salad and toss to coat. Season with salt and pepper. Cover and refrigerate for 2 hours before serving.
