Broccoli and Cauliflower Salad

Description

This salad has been a family-favorite for years. Even people who don’t typically like salad are surprised by how much they enjoy this dish. This is a real winner at potlucks and other large gatherings, as it makes quite a lot of salad.

Ingredients

  • 1 pound bacon
  • 2 cups mayonnaise
  • ⅓ cup grated Parmesan cheese
  • ¼ cup white sugar
  • ½ teaspoon dried basil
  • 4 cups broccoli florets
  • 4 cups cauliflower florets
  • 1 large red onion, thinly sliced
  • 1 large head lettuce, cut into bite-size pieces
  • 2 cups seasoned croutons
  • 1 cup sliced water chestnuts

Instructions

  1. Place bacon in a large skillet and cook over medium-high heat
  2. turning occasionally
  3. until evenly browned
  4. about 10 minutes. Drain the bacon slices on paper towels.
  5. Whisk mayonnaise
  6. Parmesan cheese
  7. sugar
  8. and basil together in a large bowl until smooth. Add broccoli
  9. cauliflower
  10. and red onion to mayonnaise mixture; toss to coat. Refrigerate salad until chilled and flavors have blended
  11. 3 hours to overnight.
  12. Crumble bacon. Mix bacon
  13. lettuce
  14. croutons
  15. and water chestnuts into salad.
