Blueberry Loaf

Description

An easy-to-make, delicious blueberry loaf that works equally well with fresh or frozen blueberries.

Ingredients

  • 1 ½ cups all-purpose flour
  • ¾ cup white sugar
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 egg
  • ½ teaspoon vanilla extract
  • 1 ½ cups blueberries

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  2. Mix flour
  3. sugar
  4. baking powder
  5. and salt in a large bowl. Stir milk
  6. oil
  7. egg
  8. and vanilla extract into flour mixture until just blended; gently fold blueberries into batter and pour into prepared loaf pan.
  9. Bake in the preheated oven until a toothpick inserted into the center comes out clean
  10. 60 to 70 minutes. Cool briefly on a wire rack before inverting carefully onto a serving plate or cooling rack. Let cool completely.
