Bean Soup

Description

A tasty ham and navy bean soup.

Ingredients

  • 1 (16 ounce) package dried navy beans
  • 7 cups water
  • 1 ham bone
  • 2 cups diced ham
  • ¼ cup minced onion
  • ½ teaspoon salt
  • 1 pinch ground black pepper
  • 1 bay leaf
  • ½ cup sliced carrots
  • ½ cup sliced celery

Instructions

  1. Rinse beans; transfer to a large stockpot and add water. Bring to a boil and simmer for 2 minutes; remove from heat
  2. cover
  3. and let stand for 1 hour.
  4. Add ham bone
  5. diced ham
  6. onion
  7. salt
  8. pepper
  9. and bay leaf. Bring to a boil; reduce heat to low
  10. cover
  11. and simmer until beans are soft
  12. about 1 hour and 15 minutes.
  13. Add carrots and celery; cook until tender
  14. about 10 to 15 minutes.
  15. Remove ham bone from the pot and place on a cutting board until cool enough to handle. Remove any meat from the bones and cut into bite-sized pieces; stir into soup until warmed through.
