Basic Vegetable Stock

Description

This is a good basic stock, and is perfect for vegetarians!

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion
  • 2 stalks celery, including some leaves
  • 2 large carrots
  • 1 bunch green onions, chopped
  • 8 cloves garlic, minced
  • 8 sprigs fresh parsley
  • 6 sprigs fresh thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 2 quarts water

Instructions

  1. Chop carrot
  2. celery
  3. and onion into 1-inch chunks.
  4. Heat oil in a soup pot over high heat. Add carrots
  5. celery
  6. onion
  7. scallions
  8. garlic
  9. parsley
  10. thyme
  11. and bay leaves. Cook
  12. stirring frequently
  13. until vegetables soften and begin to brown
  14. 5 to 10 minutes.
  15. Add salt and water and bring to a boil. Lower heat and simmer
  16. uncovered
  17. 30 minutes.
  18. Strain. Discard vegetables.

Cook Time: 35 mins

Total Time: 50 mins
