Banana Cake IX

Description

Delicious banana cake, we don’t need to frost it! Use ripened bananas.

Ingredients

  • 2 ¼ cups sifted cake flour
  • 1 ¼ cups white sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup shortening
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 bananas, mashed

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9×13 inch pan.
  2. In a large bowl
  3. sift together the flour
  4. sugar
  5. baking powder
  6. baking soda and salt. Make a well in the center and add shortening
  7. eggs
  8. vanilla and bananas. Beat 2 minutes at medium speed with electric mixer. Pour batter into prepared pan.
  9. Bake in the preheated oven for 25 to 30 minutes
  10. or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
