Banana Blueberry Muffins with Lavender

These muffins are some of the best I’ve ever tasted. The lavender gives the flavor a slightly fresher taste, bringing out the vibrancy of the blueberries. You’ve got to try it! Serve warm with soft butter, if desired.

Ingredients

  • cooking spray
  • 1 cup all-purpose flour
  • ¾ cup whole-wheat flour
  • 1 cup white sugar
  • 2 teaspoons baking powder
  • 1 ½ teaspoons lavender flowers
  • ¼ teaspoon salt
  • 2 ripe bananas, mashed
  • ½ cup 1% milk
  • ¼ cup canola oil
  • 1 egg, beaten
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Spray a 12-cup muffin tin with cooking spray.
  2. Combine all-purpose flour
  3. whole-wheat flour
  4. sugar
  5. baking powder
  6. lavender
  7. and salt together in a bowl. Mix bananas
  8. milk
  9. canola oil
  10. and egg together in a separate bowl. Add banana mixture to flour mixture; stir until just combined. Fold in blueberries. Spoon batter into prepared muffin tin.
  11. Bake in the preheated oven until golden and a toothpick inserted in the center comes out clean
  12. about 20 minutes. Cool muffins in tin for 5 minutes before transferring to a wire rack.
