Baked Potato Soup I

Description

Thick and creamy. Uses leftover baked potatoes.

Ingredients

  • 12 slices bacon
  • β…” cup margarine
  • β…” cup all-purpose flour
  • 7 cups milk
  • 4 large baked potatoes, peeled and cubed
  • 4 green onions, chopped
  • 1 ¼ cups shredded Cheddar cheese
  • 1 cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper

Instructions

  1. Place bacon in a large skillet and cook over medium-high heat
  2. turning occasionally
  3. until evenly browned
  4. about 8 to 10 minutes. Drain bacon slices on paper towels; crumble and set aside.
  5. Meanwhile
  6. melt butter in a stockpot or Dutch oven over medium heat. Gradually add flour
  7. whisking until well-combined. Slowly pour in milk
  8. whisking constantly until smooth and thickened.
  9. Add potatoes and onions and bring to a boil
  10. stirring frequently. Reduce heat and simmer for 10 minutes.
  11. Stir in crumbled bacon
  12. Cheddar cheese
  13. sour cream
  14. salt
  15. and pepper. Continue cooking and stirring until cheese is melted.

Cook Time: 25 mins

Total Time: 40 mins
