Ingredients
- 4 slices Farmland® Bacon, cooked
- 2 Mexican bolillo rolls or baguettes, sliced in half horizontally
- 4 eggs, fried
- ½ cup Cotija cheese, crumbled
- Cilantro for garnish
- 2 tablespoons vegetable oil
- ½ cup diced yellow onion
- 1 jalapeno pepper, seeds removed, diced
- 2 garlic cloves, sliced
- 1 (15 ounce) can black beans, rinsed and drained
- ½ teaspoon ground cumin
- 1 lime, juiced
- 1 cup chicken stock
- 2 ripe tomatoes, seeds removed, diced
- ¼ cup diced red onion
- ½ jalapeno pepper, seeds removed, diced
- ¼ cup fresh cilantro, minced
- 1 lime, juiced
- salt and pepper to taste
