Ingredients

  • 4 slices Farmland® Bacon, cooked
  • 2 Mexican bolillo rolls or baguettes, sliced in half horizontally
  • 4 eggs, fried
  • ½ cup Cotija cheese, crumbled
  • Cilantro for garnish
  • 2 tablespoons vegetable oil
  • ½ cup diced yellow onion
  • 1 jalapeno pepper, seeds removed, diced
  • 2 garlic cloves, sliced
  • 1 (15 ounce) can black beans, rinsed and drained
  • ½ teaspoon ground cumin
  • 1 lime, juiced
  • 1 cup chicken stock
  • 2 ripe tomatoes, seeds removed, diced
  • ¼ cup diced red onion
  • ½ jalapeno pepper, seeds removed, diced
  • ¼ cup fresh cilantro, minced
  • 1 lime, juiced
  • salt and pepper to taste
