Avocado and Ham Salad

Description

This is really light and refreshing. It’s also very filling. The mixed beans I used were left over from the night before, but if you are making them fresh, soak them overnight in water, then boil for at least 20 minutes. Leave to cool before adding to the salad.

Ingredients

  • 1 cup shredded Romaine lettuce
  • ½ cup mixed salad greens
  • ½ cup arugula
  • ½ cup cooked mixed beans, drained
  • ½ cup chopped cucumber
  • ⅓ cup chopped sweet red pepper
  • 3 radishes, sliced
  • 1 tomato, sliced
  • 1 small avocado, peeled, pitted, and chopped
  • 1 slice ham, chopped
