Asparagus Guacamole

Description

Guacamole without the fatty avocado.

Ingredients

  • 24 spears fresh asparagus, trimmed and coarsely chopped
  • ½ cup salsa
  • 1 tablespoon chopped cilantro
  • 2 cloves garlic
  • 4 green onions, sliced

Instructions

  1. Place the asparagus in a pot with enough water to cover. Bring to a boil
  2. and cook 5 minutes
  3. until tender but firm. Drain
  4. and rinse with cold water.
  5. Place the asparagus
  6. salsa
  7. cilantro
  8. garlic
  9. and green onions in a food processor or blender
  10. and process to desired consistency. Refrigerate 1 hour
  11. or until chilled
  12. before serving.
