Asian Coconut Rice

Description

I tried so many different ways to duplicate my favorite restaurant’s coconut rice after they went out of business. This one is perfect! Garnish with toasted coconut and chopped cilantro if you like.

Ingredients

  • 1 (14 ounce) can coconut milk
  • 1 ¼ cups water
  • 1 teaspoon sugar
  • 1 pinch salt
  • 1 ½ cups uncooked jasmine rice

Instructions

  1. Combine coconut milk
  2. water
  3. sugar
  4. and salt in a medium saucepan; stir until sugar is dissolved. Stir in rice.
  5. Bring to a boil over medium heat. Cover
  6. reduce heat
  7. and simmer until rice is tender and liquid is absorbed
  8. 18 to 20 minutes.

Prep Time: 5 mins

Cook Time: 20 mins

Total Time: 25 mins
