Arugula, Chicken, and Walnut Couscous

A quick and delicious, fresh, one-pot meal. This is my favorite ‘go-to’ meal on a busy night. It’s full of flavor and really healthy.

Ingredients

  • 1 teaspoon olive oil
  • ¼ cup chopped walnuts
  • 1 teaspoon olive oil
  • ½ pound shiitake mushrooms, sliced
  • 1 teaspoon olive oil
  • ½ pound skinless, boneless chicken breast halves, cubed
  • 3 cloves garlic, thinly sliced
  • 1 ¼ cups fat-free chicken broth
  • 3 cups ( lightly packed) baby arugula, very coarsely chopped
  • 1 (5.9 ounce) package Parmesan-flavored couscous
  • ¼ cup chopped fresh basil

Prep Time: 15 mins

Cook Time: 15 mins

Total Time: 35 mins
