Apple Squash Soup

Description

This is a wonderful fall recipe. Goes great with some crusty bread and fresh apple cider. Takes some prep time, but it’s worth it!

Ingredients

  • 1 acorn squash, halved and seeded
  • 1 (13.75 ounce) can low-sodium chicken broth, divided
  • ½ cup butter
  • 1 large onion, sliced
  • 2 apples – peeled, cored, and sliced

Prep Time: 30 mins

Cook Time: 45 mins

Total Time: 1 hr 15 mins

Servings: 4
